Georgia Black (Secluded) Chilli Seeds. The Georgia black (C. Chinese) is a totally awesome cultivar. This has to be one of our absolute favourite chillies. Highly recommended. In many ways this chilli is exactly like Aji Panca, except these pods are shorter. We understand that these come from Georgia, USA, but it almost seems that these are a variant of Aji Panca. This plant is a very big producer. A large and unusual plant with it’s unique plant structure and hairy foliage. Pods ripen from dark green to black, before going a very deep chocolate colour when fully ripened. Pods do take a while to ripen, but seem to ripen faster than Aji Panca.
These pods are super fresh but are well suited to drying. When fully ripe, the placenta rich inners of these pods turn a reddish colour, which aesthetically looks very attractive.
As mentioned, these pods are well suited for drying into a powder, but would not go amiss as a substitute for Aji Panca paste, which is essential in many South American dishes. Heat wise, these chillies range 30,000 – 50,000 SHU. This chilli is exceptional in its flavour, offering almost identical Aji Panca flavours. Earthy, rich, savoury, fruity… raisin flavours build up in the mouth.
