Chilhuacle Negro
Chilhuacle Negro Chilli Seeds. The Chilhuacle Negro (C. Annuum) is a rare Mexican chilli that originates from teh Cañada valley in Oaxaca. Literally translated, this chilli means "ancient". This chilli is most famous for its use in Mole sauce. The fact that this chilli is dark brown in colour does lend itself to making mole sauce. This chilli is also very unique in its flavour profile. The falvour of these chillies is sweet and fruity with hints of cocoa. These chillies are specialised and heat is not a factor with these. They are mild, coming in at around 1,000 - 2,000 SHU. These are definately a specialised variety. In our books, plants grow to around 50cm in height and not great producers, yielding but just a hand full of pods that have a poblano shape to them. Pods ripen from dark green to dark brown when fully ripened. Pods are not terribly large - reaching a length of around 10cm. Pods are thin skinned, making them great for drying. When used in cooking, pods are traditionally roasted in a pan to realease flavour and add a little roasted aroma to the pods before adding to dishes. A really rare specialised chilli for your Mexican cooking!
