Assam Chilli Seeds. The Assam (C. Annuum) chilli variety is ot to be confused with the better known C. Chinense chillies (Bhut Jolokia) that infamously originate from Assam, India. This variety is a type of Cayenne (C. Annuum) variety that grows in Assam and is a generically grown annuum variety that is very hot. This plant grows well, but it is noted that needs to be planted early season as it does like peak summer weather to ripen well. The plant grows well into a typical annuum structured plant that yield a good harvest of small cayenne type pods. This variety is quite simillar to the Naga Khorika, but far less productive than the latter. Pods ripen from dark green to red. Our plant showed a black phase to the pods before turning red, which is quite striking and unusual. Pods ripen well and can also be left to ripen on the plant before picking. Beautiful red pods have a typical cayenne aroma and flavour profile. The heat on the would be around the 80,000 - 100,000 SHU mark. Good flavour and a lengthy peppery burn makes it understandible why this variety is grown extensively in Assam. THese chillies are typically suited to drying and grinding up into a hot chilli powder that can be used for pretty much any basic ingredient. In assam, these are used for pickling, chilli powder (base powder for curries) and used raw in cooked food and as a raw accomanyment. A really awesome authentic Indian chilli.
