Aji Omnicolor (Secluded) chilli seeds. The Aji Omnicolor (C. Baccatum) is a very unusual, striking and beautiful plant. This is a compact small to medium sized plant that grows well and consistently through the season, producing lots of upward facing, pointy, pendant shaped pods that are completely white. The plant stands out with its striking contrast of white pods and green foliage. As with many Baccatums, this plant loves the sun and will take quite some time to change colour. First sign of any colour change is a purple blush - that is quite common with most white baccatum chillies. From there, plants will start changing from white to cream, yellow, orange and finally red when fully ripe. Pods will also drop late season - from facing upward to hanging down on the plant. The plant does have a tendancy to spread out as it matures and does loose it's compactness later in the season. At all stages through the grow cycle of this plant, it is a beautiful plant - from its all white stage to multi coloured finale. The Aji Omnicolour certainly ticks the Ornamental box. This chilli plant would look fantastic in any garden and is well suited to growing in containers and on balconies. A really unsual and beautifully striking plant.
But this variety is not just about looks - it definitely has its place in the kitchen too. Pods are crunchy and juicy. Due to its different colours, it can be used in all the different stages of colour. Yes, when white pods are less hot and have a cleaner more baccatum taste - that is more citrus and eaux de cologne. With colour comes heat and sweetness. Fully ripe pods have less of the clean flavour and give a full bodied fruity sweet aroma and flavour. The burn from these is front of mouth and back of the throat with an estimated heat of around 30,000 - 50,000 SHU. Pods can be used fresh in salsas or can be dried when fully ripe, to create a great general purpose chilli powder or flakes.
