Aji Panca (Secluded)
Aji Panca Secluded Chilli Seeds. The Aji Panca (C. Chinense) is a lovely variety from Peru, South America. This chilli is very specific to Peruvian cuisine. Pods have virtually no heat, but a very sweet, fruity, herbaceous / earthy / forest floor leafy, smoky flavour - which imparts a very specific aroma and flavour profile to food. Very delicate flavours, but definitely something unsual there. The plants grow to around 80cm in height in our experience. They are generous producers, producung dozens of enlongated pendant shaped pods that grow to about 8 to 12 cm in length. Pods ripen from a dark green to chocolate brown. These pods do take a very long time to fully ripen. So, an early start to the season is recommended with this variety. Having said this, these plants are very tollerant of cooler temps. Pods are redish brown on the inside and have quite a bit of placenta, but as mentioned are not hot at all. We noticed just the slightest tingle. These pods are traditionally dried and used dried or made into a sauce made from reconstituted pods. We could not help feel that the Aji Panca was very similar to the Pasilla Bajio.
