Aji Golden

Aji Golden chilli seeds. The Aji Golden (C Baccatum) is a South American chilli. Pods ripen from an translucent pale green colour to a rich yellow / golden when fully ripe. This plant is a great grower and producer. In fact it was one of the best for our season. It germinates well and has consistent growth. This plant will mature into a large plant. Our plant reached around 120 -140cm in height. The structure of the plant is wispy and bushy. This requires the plant to be staked as the sheer weight of all the pods will cause the plat to fall over. Pods are a pendant shape with a slight curvature and grow to a length of about 6 - 8cm. This plant has many similarities with the Aji Cristall, but these are definitely different plants. The flavour of the slightly unripe pods is clean, citrus with a slight taste of floral/perfume. Pods a slightly milder when not fully ripe. Once fully ripe, pods are around 30,000 SHU - depending on growing conditions. When Golden in colour, the pods are much sweeter, very fruity and less of the floral flavour. As is the case with the Aji Cristal, these pods do lend themselves to being pickled, stuffed, used fresh in salsas or sauteed into dishes. These can also be dried and made into a delicious chilli powder. This plant is really very special and versatile - it gets a two thumbs up from us!
