Aji Colorado
Aji Colorado Chilli Seeds. The Aji Colorado (C. Baccatum) comes from Bolivia, South America. A lesser known, yet awesome Aji variety. This cultivar is all about production. A massive producer of generous pointed pendulum shaped pods that ripen from a green to red with a slight matt appearance and turn a lovely dark deep red when ripe. This cultivar is quite similar to the Aji Santa Cruz, though there are differences. These chillies are super fresh tasting and suitable for use in salsas and any fresh dish that could do with a lovely red pop and a delicate zesty crunch. The arome on these is clean, peppery and fruity. Taste wise, these are less sweet than minerally, almost salty actually. In typical Baccatum fashion, the flavour here also has that fresh citrus we know to expect from Baccatums. These pods would suit themselves to drying. Quite thin skinned, coupled with their drak red colour, would make these ideal for turning into powder.
